African Food is the World’s Next Big Culinary Discovery: Zimbabwean Chef
It’s important to reintroduce traditional meals in schools to rebuild taste for indigenous ingredients — a step that would empower rural farmers, boost local markets, and reconnect the youth with their culinary roots, Zimbabwean culinary voice Tafadzwa Anifasi, aka De Ankarra Chef, told Sputnik Africa.
Speaking on the sidelines of the African Chefs Gathering and Policy Convening on African Food Systems in Addis Ababa (July 23–25), he called on chefs to modernize and showcase traditional dishes in creative, trend-worthy ways — making them as shareable as they are flavorful.
“We all know about Mexican, we know about European, we know Chinese. People don't really know African food... it’s the next frontier of discovery.”
